I really get the entertaining bug in the fall. I am constantly cooking and trying out new fun and savory recipes. But I always have my favorite FALL backs:) Like Tuscan white bean soup. Sounds plain I know but seriously once you've tasted this silky smooth and creamy soup you will crave it... and their is only like five ingredients!! Here's the recipe

Butter, olive oil, salt, pepper and shallots. |

2 cans white beans. |
Just promise me you'll make this soup just once this fall and tell me what you think! I love to serve this with a spinach and cranberry salad, and toasted rustic bread on the side. Pair with your favorite Zin and you've got a meal that's worthy of your best guests, your family and friends.

Mix in beans and sage, stir.
|

Add your broth, garlic and simmer. |

Let soup cool after simmer and ladle into blender. Blend and pour back into soup pot. |

Turn heat to medium and add your cream |

Drizzle with olive oil and season to taste. |

Megs has made this for me a couple times and your right; it's so simple yet elegant and delicious. It's 11:30 at night and white bean soup sounds soooo good:)
